One of our goals is to help you find great inspiration and sites to consider.

After Christmas, I still needed to cleanse my diet and my bank account, so this week, we’re doing three meals from one of our favorite sites - Budget Bytes. We love that the site is all about getting meals on the table while keeping cost in mind. So many sites and recipes bring you new ideas with more interesting (read: expensive) ingredients, so we love that Budget Bytes is a different flavor.

Pork and Peanut Dragon Noodles

These dragon noodles are all things sweet but spicy. We used ramen noodles, but in a pitch, spaghetti would be a fine substitution (if a little heavier). Also, there’s an alternative with no pork, if you’re vegetarian.

Beth at Budget Bytes recommends these with something green so we added broccoli. Adding spinach or bok choy would also take this dish from just tasting good to also feeling great about getting our veggies in.

It’s a little bit amazing how few ingredients taste so good.

There are so many great burrito bowl versions on Budget Bytes, but we used this one with ground turkey for a little protein. If you are vegetarian, easy to sub in crumbles or tofu - or just leave it with black beans.

The best part of these bowls are a) how much of them used half-full jars in our fridge and b) how much can be done on Sundays to make the week easier.

Thai Coconut Curry Carrot Soup

If you love soup and you love/like curry, you will really (really) like this soup. Vegetarian and works for lunch or for dinner. Just serve with any bread and/or salad on the side.
